【브레이크뉴스 】박은정 기자= ‘피할 수 없다면 바꾸자!’ 배달음식을 대하는 올바른 자세다. 팬데믹 이후 가속화된 배달음식 전성시대는 앞으로도 계속될 전망이다.

 

여기에 간편식까지 더해진 우리의 식탁에 현명한 지혜가 필요한 때다.

 

‘잘 먹고 잘 사는 것’은 생명을 지닌 유기체의 숙명이다. 생화학의 관점에서 보면 유기체의 건강은 좋은 재료(먹거리)에서 시작한다. 현생 인류는 조상들이 상상도 할 수 없었던 다양하고 풍족한 먹거리를 즐기고 있다. 

 

문제는 먹거리의 질이다. 몸에 좋은 먹거리의 기본은 신선도인데, 바쁜 생활 속에서 매 끼니 신선한 재료로 직접 만든 음식을 먹기는 현실적으로 힘들다. 

 

간편하기로는 미리 조리해두었다가 잠깐 데워 먹으면 되는 냉동식품과 간편식이 최고지만 신선도와는 거리가 멀다. 신선함과 편리함을 모두 충족해주는 먹거리에 대한 인류의 고민은 지금도 진행형이다.

 

코로나19가 앞당긴 배달음식 열풍

 

1인가구와 혼밥족의 증가와 함께 코로나19로 식생활에도 많은 변화가 따랐다. 이런 사회 흐름에 발맞춰 갖가지 간편식과 배달음식 시장이 커졌고 간편하게 한 끼 식사를 해결하는 경우가 늘었다. 전화 한 통, 혹은 휴대폰 화면을 몇 번 누르면 현관 앞까지 따끈한 음식을 가져다주는 배달 앱이 호황을 누리고 있다. 

 

편리함으로만 보자면 이보다 더 편할 순 없다. 그저 포장을 풀고, 먹고, 버리면 끝이다. 아침에 일어나 출근 준비하기도 바쁘니 아침밥을 잘 챙겨 먹는 것은 언감생심. 시리얼이나 냉동식품으로 한 끼 때우기에 급급하다. 저녁도 다르지 않다. 재료를 손질하고 끓이고 먹고 설거지까지 하고 나면 퇴근 후 여가를 즐기는 것은 거의 불가능하다. 그러니 배달 앱이 추천하는 다양한 먹거리에 눈길과 손길이 더 자주 갈 수밖에.

 

 맛과 영양, 두 마리 토끼는 환상

 

맛으로 치면 배달음식은 꽤 만족스럽다. 아무리 유튜브의 최신 레시피를 보고 따라 한들, 한 가지 음식만 다년간 만들어온 전문 셰프의 노하우를 초보 요리사가 따라잡긴 힘들다. 

 

문제는 영양이다. 건강하지 못한 먹거리의 대명사라는 냉동식품, 간편식조차도 열량, 영양 성분, 첨가물, 유통기간 등 기본 정보를 제공한다.

 

이에 비해 배달음식은 어떤 재료가 얼마만큼 들어갔는지, 입맛을 사로잡기 위해 어떤 첨가물이 들어갔는지, 재료가 얼마나 신선한지 등을 전혀 알려주지 않는다. 

 

다양한 계층의 입맛을 사로잡기 위해 설탕, 소금, 향신료 등을 많이 사용하는 것도 문제다. 배달음식을 자주 이용하는 계층은 달고 짜고 적당히 자극적인 맛에 길들어 있기 때문이다. 

 

야박하다는 댓글을 피하고자 칼로리는 과잉일 확률이 아주 높다. 맛과 편리함 대신 영양과 건강의 희생은 불가피해 보인다. 환경오염은 또 다른 걱정거리다. 배달음식을 담은 플라스틱 용기와 비닐 사용이 급증하면서 지구촌 곳곳에서 생태계가 위협을 받고 있다.

 

쌀은 옳고 밀가루는 틀리다??

 

쌀을 주식으로 하는 한국인들의 흔한 오해는 ‘밀가루 음식이 몸에 해롭다’는 생각이다. 만일 이 말이 사실이라면, 빵을 주식으로 하는 서구인들의 질병 발생률은 동양인보다 훨씬 높고 평균수명도 낮아야 하는데 이는 사실과 다르다.

이때 췌장은 인슐린을 분비해 급격한 혈당 상승에 대응하는데, 이런 상황이 반복되면 혈액속의 포도당을 세포 속으로 이동해주는 인슐린의 기능이 저하되고 이를 ‘인슐린 저항성이 커졌다’라고 한다.

 

배달음식은 주된 칼로리원이 백미나 흰 밀가루일 경우가 많고 과식을 부추기기 쉽다. 부득이하게 배달음식을 자주 먹을 수밖에 없다면, 주칼로리원만이라도 현미, 콩, 팥, 보리 등 잡곡으로 대체하면 어떨까? 밥을 좀 넉넉하게 지어 한 끼 분량씩 소분해 냉동해두었다가 전자레인지에 돌려 활용하는 것이다. 

 

잡곡밥이 입맛에 맞지 않는다면, 냉장고를 활용하여 저항성 전분을 늘릴 수 있다. 남은 밥을 냉장고에 12시간 정도 넣어두면, 소화 흡수가 잘되지 않는 저항성 전분이 늘어나 급격한 혈당 상승을 방지할 수 있다.
